Quick & Easy Sausage Breakfast Casserole



This breakfast casserole is a really nice hearty, cheesy egg, potato and sausage dish that is quick and easy to make. It comes out perfect every time. 

I love to make this on the weekends because it isn't messy to make or time consuming. Plus the family loves it.

I call this my no mess, no fuss breakfast dish.

Ingredients


2 1/2 Frozen Diced O'Brien Potatoes with onions and peppers
1 1/2 cups frozen crumbled pork sausage
1 1/4 cup shredded cheddar cheese
1/4 cup original Bisquick mix
1 1/2 cups milk
1/4 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon ground mustard
4 eggs, beaten


Directions 

Heat oven to 400°F. 
Grease rectangular baking dish, a 11 x 7 or 9x9 baking pan . 
Beat eggs.
Cook sausage in a skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain. (I have to admit when I am pinched for time I buy the pre-cooked crumbled sausage in a bag!)
Stir together sausage, potatoes and 1 cup of the cheese in baking dish.
Mix Bisquick mix, milk, pepper and eggs until blended. Pour over sausage mixture.
Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. 
Sprinkle with remaining cheese and bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minute before serving.
